With the 2011 California avocado harvest scheduled to ramp up in just a few weeks, the Irvine-based California Avocado Commission is urging foodservice operators to begin planning menu items that showcase the fruit.

There will be ample supplies of the hand grown in California avocados from March through September, according to a news release. Chefs looking for menu ideas may find them on the commission’s website, www.CaliforniaAvocado.com/Foodservice.

Chefs and operators visiting the website also may request all of the commission’s recipe collections including the Culinary Companion CD and the Magic of the California Avocado, The foodservice Menu Guide and Too Hot Not to be Cool brochures.
