Nash Produce, a Nashville, N.C.-based sweet potato processor and distributor, sponsored a cooking class to highlight the versatility of sweet potatoes in cooking.

Ricky Moore, a Chapel Hill, N.C., chef, presented “A Study in Sweet Potatoes” class April 7 at Bickett Market, a Raleigh, N.C neighborhood market that supports local produce.

The class, which was open to the public, featured dishes using four different varieties of sweet potatoes provided by Nash Produce:

  • Masala Spiced O’Henry Sweet Potato-Panner Tater Tots;
  • Raw Covington Sweet Potato Slaw;
  • Simply Baked Evangeline Sweet Potato with Rosemary, Olive Oil and Lemon Salt; and
  • Purple Sweet Potato Pound Cake with “Chicha Morada” Glaze
