(Feb. 25) Eleven chefs have been selected to share their favorite Idaho potato recipes as part of the Idaho Potato Commission’s Recipes for Relief online program.

The program, which began in February, will commemorate the United Nations calling 2008 the International Year of the Potato.

Additionally, the program helps raise awareness and money for UNICEF, the U.N. organization that provides food, clean water and education to children in more than 150 countries.

Each month a different chef features his/her recipe on the commission’s Web site, www.idahopotato2008.org.

Each time a visitor clicks on the recipe of the month, the commission donates 10 cents to the U.S. Fund for UNICEF, with a guaranteed donation of $50,000.

“We are very pleased the United Nations is recognizing the importance of the potato in helping end world hunger,” Frank Muir, the commission’s president and chief executive officer, said in a news release. “We know that children are particularly vulnerable to hunger and malnutrition, which is why the U.S. Fund for UNICEF is such a natural organization for us to work with.”

The participating chefs are:

  • Tracy O’Grady — Willow, Arlington, Va.

  • Susan Spicer — Bayona, New Orleans

  • Todd Downs — Food Sense Inc., Indianapolis

  • Frank Ostini — Hitching Post, Buelton, Calif.

  • Joachim Splichal — Patina, Los Angeles

  • Paul Prudhomme — K-Paul, New Orleans

  • Jon Mortimer — Mortimer’s of Boise, Boise, Idaho

  • David Burke — David Burke & Donatella, New York

  • David Walzog — SW Steakhouse, Wynn, Las Vegas
